- Chicken thighs1.5 lbs
- Chicken broth2 cups
- Turmeric powder1.5 tsp
- Lemongrass2 stalks, finely minced
- Garlic4 cloves, minced
- Shallots2, minced
- Fish sauce3 tbsp
- Sugar1 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Vegetable oil3 cups (for frying)
- Fresh mint leavesfor garnish
- Fresh cilantrofor garnish

Rinse jasmine rice. Cook rice with chicken broth, turmeric powder, and half of the minced lemongrass until fluffy. The rice should be a vibrant yellow.

Cut chicken thighs into bite-sized pieces. Marinate with minced garlic, minced shallots, remaining minced lemongrass, fish sauce, sugar, salt, and pepper for at least 30 minutes.

Heat vegetable oil in a wok or deep pot to 350°F (175°C).

Fry chicken pieces in batches until golden brown and crispy. Remove and drain on paper towels.

Heat about 1/2 cup of the frying oil until very hot. Drizzle the hot oil over the fried chicken pieces (xối mỡ).

Serve the crispy chicken over the turmeric-infused rice. Garnish generously with fresh mint and cilantro. Serve with a side of chili-garlic fish sauce.
