- Firm tofu, pressed and crumbled200g
- Glass noodles40g
- Shiitake mushrooms, dried and rehydrated, finely chopped30g
- Carrots, finely julienned1 small
- Bean sprouts, chopped50g
- Scallions, chopped2 stalks
- Vegetarian oyster sauce or soy sauce2 tbsp
- Rice paper wrappers20-25 sheets
- Vegetable oil, for fryingsufficient amount
- Saltto taste
- Black pepperto taste
- Waterfor soaking noodles

Soak glass noodles, drain, and chop.

In a bowl, combine crumbled tofu, chopped shiitake mushrooms, julienned carrots, chopped bean sprouts, chopped scallions, chopped glass noodles, vegetarian oyster sauce (or soy sauce), salt, and pepper. Mix well.

Dip rice paper wrappers in warm water until pliable.

Place filling on the wrapper, fold sides, and roll tightly.

Heat oil in a pan over medium-high heat.

Fry rolls in batches until golden brown and crispy.
