  • Cucumber1/2, sliced
  • Pickled daikon and carrot1/2 cup
  • Peanut sauce for dippingAs needed

    Prepare the pork: Dice pork shoulder into small cubes. Boil pork skin until tender, then finely mince it. Combine minced pork, minced pork skin, fish sauce, sugar, black pepper, minced garlic, minced shallots, baking powder, tapioca starch, and vegetable oil in a bowl. Mix thoroughly until well combined and slightly sticky. Cover and marinate in the refrigerator for at least 2 hours, or preferably overnight.

    Shape the nem: Divide the mixture into portions. Wrap each portion around a skewer or form into small logs. If not using skewers, you can form them into small patties.

    Grill the nem: Grill the nem over medium-high heat, turning occasionally, until golden brown and cooked through. This can also be done in an oven broiler or a pan.

    Prepare the dipping sauce: Prepare your favorite Vietnamese peanut dipping sauce (nuoc cham nem nuong).

    Assemble and serve: Arrange the grilled nem nướng on a platter with fresh herbs, sliced cucumber, and pickled daikon and carrot. Serve with rice paper wrappers and the dipping sauce.
