- Rice paper wrappers8-10 sheets
- Rice vermicelli noodles100g
- Fresh lettuce leaves1 cup
- Fresh mint leaves1/4 cup
- Fresh cilantro sprigs1/4 cup
- Cucumber, julienned1/2
- Warm waterfor dipping wrappers

Prepare Nem Chua: Slice the Nem Chua into thin strips.

Cook noodles: Cook rice vermicelli noodles according to package directions. Drain and rinse with cold water.

Prepare wrappers: Dip one rice paper wrapper in warm water for about 15-20 seconds until softened.

Assemble rolls: Lay the softened wrapper flat. Arrange lettuce, mint, cilantro, julienned cucumber, cooked vermicelli, and Nem Chua strips on one half of the wrapper.

Roll: Fold the bottom edge over the filling, then fold in the sides, and tightly roll up the spring roll.
