- Shallots1 tbsp, minced
- Fish sauce2 tbsp
- Sugar1 tsp
- Vegetable oil2 tbsp

Process the snakehead fish fillet into a paste. Mix in minced lemongrass, shallots, fish sauce, sugar, salt, and pepper.

Wash and pat dry the betel leaves. Place a spoonful of the fish paste onto each betel leaf and wrap it securely, like a small parcel.

Heat vegetable oil in a pan or grill. Grill the wrapped fish cakes for about 5-7 minutes per side, until the leaves are slightly charred and the fish is cooked through.
