- Garlic10 cloves
- Butter100 g
- Lemongrass2 stalks
- Fish sauce2 tbsp
- Sugar1 tbsp
- Red chili flakes1 tsp
- Cilantro1 bunch
- Saltto taste
- Black pepperto taste

Clean the sea snails thoroughly. Soak in salted water for at least 1 hour, then rinse.

Mince the garlic. Finely chop the white part of the lemongrass stalks. Chop the cilantro.

In a wok or large pan, melt the butter over medium heat. Add the minced garlic and chopped lemongrass. Sauté until fragrant, about 2-3 minutes.

Add the fish sauce, sugar, and red chili flakes. Stir until the sugar dissolves.

Add the cleaned sea snails to the pan. Toss to coat evenly with the sauce.

Stir-fry for about 6-8 minutes, until the snails are cooked through and have opened.

Remove from heat. Stir in most of the chopped cilantro. Season with salt and black pepper if needed.

Transfer to a serving dish and garnish with the remaining cilantro.
