- Blood clams (Sò huyết)1 kg
- Tamarind concentrate4 tbsp
- Garlic2 cloves
- Chili flakes1 tsp
- Sugar1 tbsp
- Fish sauce1 tbsp
- Vegetable oil1 tbsp
- Water30 ml
- Saltto taste
- Black pepperto taste
- Scallionsfor garnish

Clean the blood clams thoroughly. Soak in salted water for 30 minutes.

Mince garlic. In a small bowl, mix tamarind concentrate, sugar, fish sauce, and water.

Heat vegetable oil in a wok or large pan over high heat. Add minced garlic and chili flakes, stir-fry for 30 seconds until fragrant.

Add the drained clams and stir-fry quickly for 2 minutes until they start to open.

Pour in the tamarind mixture. Stir continuously until the clams are fully cooked and the sauce coats them, about 3-5 minutes.

Season with salt and pepper if needed. Garnish with chopped scallions.
