Prepare the chili-salt paste: Finely mince bird's eye chilies and garlic. Finely mince the tender inner part of lemongrass stalks. Combine minced chilies, garlic, and lemongrass in a bowl.

Add fish sauce, sugar, salt, and black pepper to the chili-salt mixture. Stir well to combine.

Add the cleaned mantid shrimp to the bowl with the marinade. Toss to coat evenly. Let marinate for at least 20-25 minutes.

Preheat your grill to medium-high heat. Lightly oil the grill grates.

Grill the marinated mantid shrimp for 3-4 minutes per side, or until their shells turn bright red and the meat is opaque. Be careful not to overcook.
