- All-purpose flour1 cup
- Baking powder1 teaspoon
- Salt1 teaspoon
- Black pepper1/2 teaspoon
- Cold sparkling water3/4 cup
- Vegetable oil for shallow frying1/2 cup
- Chopped scallions2 tablespoons
- Sweet chili sauce1/4 cup

Pat the fish fillets dry. Season lightly with salt and pepper.

In a bowl, combine all-purpose flour, baking powder, salt, and pepper.

Pour in the cold sparkling water and whisk gently until just combined. Do not overmix; a few lumps are okay.

Heat vegetable oil in a large skillet over medium-high heat.

Dip each fish fillet into the batter, ensuring it's well-coated. Let excess drip off.

Carefully place the battered fillets into the hot oil. Fry for 3-4 minutes per side, until golden brown and cooked through. Do not overcrowd the pan; cook in batches if necessary.
