- Snakehead fish fillets500g
- Unripe starfruit2 medium
- Fish sauce3 tbsp
- Caramel sauce (nuoc mau)1 tbsp
- Five-spice powder1 tsp
- Shallots2 cloves, minced
- Garlic2 cloves, minced
- Red chili pepper1, sliced
- Black pepper1/2 tsp
- Water1/4 cup
- Vegetable oil1 tbsp
- Cilantro and chili slicesfor garnish

Cut fish into bite-sized pieces. Marinate with 1 tbsp fish sauce, 1/2 tsp black pepper, minced shallots, and garlic for 15 minutes.

Slice starfruit thinly. Remove seeds.

Heat oil in a clay pot or heavy-bottomed saucepan over medium heat. Sear fish pieces until lightly browned.

Add remaining fish sauce, caramel sauce, five-spice powder, and water. Stir gently.

Arrange starfruit slices over the fish. Add chili slices.

Bring to a simmer, then cover and braise on low heat for 25-30 minutes, or until fish is cooked and sauce is reduced and glossy.
