Prepare the rice: Rinse jasmine rice. Sauté minced garlic and grated ginger in a pot with a little oil. Add rice and stir to coat. Add chicken broth and salt. Cook rice according to package directions or in a rice cooker.

Prepare the chicken: Cut chicken thighs into bite-sized pieces. Season with salt and pepper. In separate bowls, prepare seasoned flour, beaten eggs, and cornstarch.

Fry the chicken: Dredge chicken pieces in flour, then dip in egg, and finally coat generously with cornstarch. Heat vegetable oil in a wok or deep pan to 350°F (175°C). Fry chicken in batches until golden brown and crispy. Drain on paper towels.

Make the sauce: In a small saucepan, combine soy sauce, oyster sauce, sugar, and water. Simmer for a few minutes until slightly thickened. Season with salt and pepper if needed.
