- Chicken thigh300g
- Garlic2 cloves
- Ginger1 tsp grated
- Fish sauce2 tbsp
- Soy sauce1 tbsp
- Black pepper1/4 tsp
- Cilantro1/4 cup chopped

Rinse jasmine rice until water runs clear. Drain.

In a clay pot, combine rice, 2.5 cups water, 1 tbsp oil, and 1 tsp salt. Stir.

Cover and cook over medium-high heat until boiling, then reduce to low and simmer for 15-20 minutes until water is absorbed.

Cut chicken thighs into bite-sized pieces. Mince garlic and grate ginger.

In a separate pan, stir-fry chicken with minced garlic and grated ginger until cooked through. Season with 2 tbsp fish sauce, 1 tbsp soy sauce, and 1/4 tsp black pepper.

Let the rice rest, covered, for 10 minutes after cooking. Gently fluff the rice, ensuring the bottom is slightly crisp.

Serve the rice from the clay pot, topped with the cooked chicken mixture. Garnish with chopped cilantro.
