- Pork belly500g
- Fish sauce3 tbsp
- Sugar1.5 tbsp
- Water1/3 cup
- Minced garlic1 tbsp
- Minced shallots1 tbsp
- Black pepper1 tsp
- Vegetable oil1 tbsp
- Cilantrofor garnish

Cut pork belly into 1-inch cubes. In a bowl, mix pork with fish sauce, sugar, minced garlic, minced shallots, and black pepper.

Heat vegetable oil in a skillet or pot over medium-high heat. Add the pork mixture and sear until browned.

Pour in the water. Bring to a simmer, then reduce heat to medium-low, cover, and cook for 20-25 minutes, stirring occasionally, until pork is tender and sauce has thickened.

Uncover and cook for a final 5 minutes to further reduce the sauce.

Serve hot, garnished with cilantro.
