- Lemongrass2 stalks, finely minced
- Garlic4 cloves, minced
- Chili1-2, finely chopped (adjust to taste)
- Sesame oil1 tbsp
- Black pepper1/2 tsp
- Salt1/2 tsp
- Water2 tbsp
- Cilantrofor garnish
- Chili slicesfor garnish

In a bowl, combine honey, soy sauce, fish sauce, minced lemongrass, minced garlic, chopped chili, sesame oil, salt, and black pepper. Mix thoroughly.

Coat the pork ribs with the marinade. Cover and refrigerate for at least 2 hours, or preferably overnight.

Preheat grill to medium-high heat.

Remove ribs from marinade, reserving any excess marinade for basting. Discard the rest.

Grill the ribs for 20-25 minutes, turning frequently. Baste with reserved marinade (or a fresh mix of honey and a little soy sauce) during the last 5-10 minutes of cooking until caramelized and cooked through.

Let the ribs rest for 5-10 minutes. Garnish with fresh cilantro and chili slices before serving.
