Bruise and cut lemongrass into 2-inch sections. Thinly slice galangal. Mince shallots and garlic.

In a pot, combine pork trotters, lemongrass, galangal, minced shallots, minced garlic, and shrimp paste.

Add fish sauce, sugar, salt, and pepper. Mix well.

Add enough water to cover the pork. Bring to a boil.

Reduce heat, cover, and simmer for 2 to 2.5 hours, or until pork is very tender.
