- Fish sauce2 tbsp
- Soy sauce1 tbsp
- Sesame oil1 tsp
- Sugar1 tsp
- Vegetable oil1 tbsp
- Salt1/2 tsp
- Black pepper1/4 tsp
- Rice paper wrappers12-16
- Fresh lettuce leaves1 head
- Fresh mint leaves1 bunch
- Fresh cilantro sprigs1 bunch
- Peanut butter1/2 cup
- Hoisin sauce2 tbsp
- Water1/4 cup

Prepare the marinade: Finely mince lemongrass, garlic, and chilies. Combine with fish sauce, soy sauce, sesame oil, sugar, vegetable oil, salt, and pepper.

Slice beef thinly against the grain. Marinate beef for at least 30 minutes.

Grill or pan-fry the marinated beef until cooked through and slightly charred. Let cool slightly, then slice into thin strips if not already.

Prepare the peanut dipping sauce: Whisk together peanut butter, hoisin sauce, and water until smooth.

Assemble the rolls: Dip one rice paper wrapper in warm water until pliable. Lay flat on a clean surface. Layer with lettuce, herbs, and a portion of the grilled beef.

Fold the sides of the rice paper inwards, then roll tightly from the bottom up.

Repeat with remaining wrappers and ingredients. Serve rolls immediately with the peanut dipping sauce.
