- Rice vinegar400ml
- Water1L
- Lemongrass, pre-sliced or paste2 tbsp
- Garlic, minced2 cloves
- Bird's eye chilies, sliced1-2
- Sugar1.5 tbsp
- Salt0.5 tsp
- Fish sauce1.5 tbsp
- Rice vermicelli noodles300g
- Mixed fresh herbs (mint, cilantro)1 cup
- Butter lettuce1/2 head

Place pre-sliced beef in a bowl.

In a pot, combine rice vinegar, water, lemongrass (paste or slices), minced garlic, sliced chilies, sugar, salt, and fish sauce.

Bring to a simmer over medium heat for 10 minutes. Taste and adjust seasoning.

Cook rice vermicelli noodles according to package directions. Rinse with cold water.

Arrange noodles, beef, herbs, and lettuce on serving plates.

Transfer the simmering broth to a table-top burner. Dip beef slices into the broth to cook. Wrap with herbs and lettuce, add noodles, and enjoy.
