- Beef sirloin or flank steak400g
- Rice vinegar150ml
- Lemongrass stalks2 stalks
- Garlic cloves3 cloves
- Fish sauce2 tbsp
- Sugar1 tsp
- Water1 liter
- Saltto taste
- Black pepperto taste
- Assorted fresh herbs (mint, basil)1/2 bunch each
- Rice vermicelli noodles300g

Thinly slice the beef.

Finely chop lemongrass and mince garlic.

In a pot, combine rice vinegar, chopped lemongrass, minced garlic, fish sauce, sugar, and 1 liter of water. Bring to a boil.

Simmer for 10 minutes. Strain the broth if desired.

Season the broth with salt and pepper to taste. Keep hot.

Prepare rice vermicelli noodles and fresh herbs.
