- Lemongrass2 stalks

- Tamarind paste3 tbsp
- Sugar1 tsp

- Water1.5 liters
- Cilantro1 bunch

Prepare catfish: Clean and cut the catfish into 2-3 inch pieces.

Prepare vegetables: Cut tomatoes into wedges. Cut pineapple into bite-sized chunks. Slice okra. Mince garlic. Bruise and cut lemongrass. Slice chili peppers.

Sauté aromatics: In a pot, sauté minced garlic and chili peppers until fragrant. Add bruised lemongrass.

Build the broth: Add water, fish sauce, tamarind paste, sugar, and salt. Bring to a boil.
