- Pre-made fried snakehead fish cakes (cá thác lác)300g
- Bitter melon (khổ qua)1 large
- Chicken or vegetable broth1.5 liters
- Fish sauce2 tbsp
- Sugar1/2 tsp
- Salt1/2 tsp
- Black pepper1/4 tsp
- Garlic, minced1 clove
- Scallions2 stalks
- Cilantro1/2 bunch
- Lime1

Prepare the bitter melon: Halve the bitter melon, scoop out seeds, and slice thinly. Blanch in boiling water for 1 minute, then rinse with cold water. Set aside.

Prepare the broth: In a pot, combine broth, fish sauce, sugar, salt, pepper, and minced garlic. Bring to a boil.

Add ingredients: Add the blanched bitter melon and pre-made fish cakes to the boiling broth. Simmer for about 10-15 minutes until the fish cakes are heated through and the bitter melon is tender.

Garnish and serve: Chop scallions and cilantro. Serve hot with lime wedges on the side.
