- Pre-made crab paste (chả cua)300g
- Tomatoes2 medium
- Firm tofu200g
- Chicken or vegetable broth1.5 liters
- Shallots2 cloves
- Garlic2 cloves
- Fish sauce3 tbsp
- Saltto taste
- Black pepperto taste
- Water500ml
- Water spinach (rau muống)1/2 bunch
- Bean sprouts50g
- Herbs (mint, basil)1/2 bunch
- Rice vermicelli noodles300g

Prepare the broth: Sauté minced shallots and garlic. Add diced tomatoes and cook until softened. Pour in chicken/vegetable broth and water. Bring to a boil.

Add crab paste: Gently add the pre-made crab paste to the boiling broth. Stir gently to break it up. Simmer for 10-15 minutes.

Add tofu: Cut firm tofu into bite-sized pieces and add to the pot. Simmer for another 5 minutes.

Season: Add fish sauce, salt, and pepper to taste. Adjust seasoning as needed.

Prepare accompaniments: Wash and cut water spinach. Arrange bean sprouts and fresh herbs.

Serve: Serve the hot broth with tofu immediately. Provide fresh vegetables, herbs, and cooked rice vermicelli noodles on the side for diners to add to their bowls.
