- Rice vermicelli noodles400g

Prepare the goat meat: Ensure it's cut into thin, bite-sized pieces.

Sauté aromatics: In a large pot, sauté lemongrass paste, ginger paste, and garlic paste until fragrant.

Add broth and spices: Pour in the broth. Add star anise powder, turmeric powder, fish sauce, and sugar. Bring to a simmer.

Cook goat meat: Add the goat meat to the simmering broth. Cook for about 15-20 minutes, or until tender.

Add vegetables and tofu: Add harder vegetables first (like carrots), followed by softer ones (like cabbage and mushrooms) and tofu puffs. Cook until vegetables are tender-crisp.

Adjust seasoning: Taste and adjust with salt, pepper, and more fish sauce if needed. Add water if the broth is too concentrated.

Prepare noodles: Cook rice vermicelli noodles separately.
