- Elephant ear fish1 whole (approx. 1-1.5 kg)
- Pre-made tempura batter mix or rice flour batter mix1.5 cups
- WaterAs per batter mix instructions
- Garlic powder1 tsp
- SaltTo taste
- Black pepperTo taste
- Fish sauce3 tbsp
- Lime juice2 tbsp
- Sugar2 tbsp
- Chili peppers1-2, sliced
- Vegetable oilFor deep frying

Clean the elephant ear fish and make deep diagonal scores on both sides.

Prepare the batter according to the package instructions, adding garlic powder, salt, and pepper.

Rub the fish with salt and pepper.

Heat vegetable oil in a wok or deep fryer to 170-180°C (340-350°F).

Dip the fish into the prepared batter, ensuring it is well-coated.

Carefully place the battered fish into the hot oil and deep-fry for about 12-15 minutes, until golden brown and crispy.

While the fish fries, mix the dipping sauce ingredients: fish sauce, lime juice, sugar, chili, and a little water.
