- Garlic4 cloves
- Fish sauce3 tbsp

- Vegetable oil2 tbsp

- Banana leaves4 large pieces
- Fresh herbs (e.g., mint, basil)for serving

Prepare the marinade: Finely mince galangal, lemongrass (white part only), shallots, and garlic. Combine with fermented rice, turmeric powder, fish sauce, sugar, vegetable oil, salt, and pepper. Mix well.

Cut the catfish into large chunks. Marinate the fish pieces for at least 45 minutes.

Prepare the banana leaves: Wash and lightly wilt the banana leaves over a flame or in hot water to make them pliable. Cut into large enough squares to wrap the fish.

Place a portion of marinated fish onto each banana leaf square. Fold the leaves to create sealed parcels.

Grill the banana leaf parcels over medium heat for about 10-15 minutes per side, or until the fish is cooked through. The banana leaf should be slightly charred.
