- Shrimp1 lb, peeled and deveined
- Tamarind paste2 tbsp
- Fish sauce3 tbsp
- Sugar2 tbsp
- Garlic3 cloves, minced
- Shallots1, minced
- Vegetable oil2 tbsp
- Water2 tbsp
- Black pepper1/4 tsp
- Salt1/4 tsp
- Green onions2, chopped for garnish
- Cilantrofor garnish

In a small bowl, mix tamarind paste, fish sauce, and sugar. Set aside.

Heat vegetable oil in a wok or large skillet over medium-high heat. Add minced garlic and shallots and stir-fry until fragrant, about 1 minute.

Add the shrimp to the skillet and stir-fry until they turn pink and opaque, about 2-3 minutes.

Pour the prepared sauce mixture over the shrimp. Add water, salt, and black pepper. Stir well to coat the shrimp evenly.

Continue to cook, stirring occasionally, until the sauce thickens and caramelizes, coating the shrimp beautifully, about 5-7 minutes.
