- Firm Tofu500g
- Lemongrass3 stalks
- Red Chilies2-3
- Garlic3 cloves
- Shallots1
- Vegetable Oil4 tbsp
- Fish Sauce2 tbsp
- Sugar1 tsp
- Saltto taste
- Black Pepperto taste
- Water2 tbsp
- Scallions2 stalks
- Cilantrofor garnish

Press the tofu to remove excess water, then cut into 1-inch cubes.

Finely mince the lemongrass (white part only), red chilies, garlic, and shallots.

Heat vegetable oil in a wok or large skillet over medium-high heat. Fry the tofu cubes until golden brown and crispy on all sides. Remove and set aside.

In the same skillet, leave about 2 tablespoons of oil. Add the minced lemongrass, chilies, garlic, and shallots. Stir-fry until fragrant, about 1-2 minutes.

Add fish sauce, sugar, salt, black pepper, and water to the skillet. Stir well to combine.

Return the fried tofu to the skillet. Toss gently to coat the tofu evenly with the lemongrass and chili mixture.

Stir-fry for another 2-3 minutes until the sauce thickens slightly and coats the tofu.

Garnish with chopped scallions and cilantro before serving.
