- Frog legs500g
- Mì Quảng noodles400g
- Turmeric powder1 tsp
- Shallots2
- Garlic3 cloves
- Ginger1 inch piece
- Shrimp paste (mắm ruốc)1 tbsp
- Annatto seeds (for color)1 tbsp
- Chicken broth1 liter
- Peanuts, roasted and crushed50g
- Crispy rice crackers (bánh đa)4
- Fresh herbs (mint, basil, cilantro)1 bunch
- Lime wedges1
- Chili, sliced1
- Vegetable oil2 tbsp
- Saltto taste
- Black pepperto taste

Marinate frog legs with salt, pepper, and half of the minced shallots and garlic.

Sauté annatto seeds in oil to release color, then remove seeds. Add remaining shallots and garlic, sauté until fragrant.

Add marinated frog legs and sear until lightly browned. Stir in shrimp paste and turmeric powder.

Pour in chicken broth and ginger. Bring to a simmer and cook for 15-20 minutes until frog meat is tender.

Prepare Mì Quảng noodles according to package instructions. Drain well.

To serve, place a portion of noodles in a shallow bowl. Ladle the frog and broth mixture over the noodles. Garnish generously with crushed peanuts, fresh herbs, crispy rice crackers, sliced chili, and a lime wedge.
