- Ground Pork500g
- Onion1 medium
- Garlic3 cloves
- Canned Tomatoes (crushed)800g
- Pancetta (diced)100g
- Red Pepper Flakes1/2 tsp (or to taste)
- Dry White Wine100ml
- Olive Oil2 tbsp
- Saltto taste
- Black Pepperto taste
- Pecorino Romano Cheese (grated)for garnish
- Fresh Parsley (chopped)for garnish

Finely chop onion and mince garlic.

Heat olive oil in a large skillet over medium heat. Add diced pancetta and cook until crispy. Remove pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Add ground pork to the skillet and cook until browned. Drain excess fat.

Add chopped onion and cook until softened, about 5 minutes.

Stir in minced garlic and red pepper flakes, cook for 1 minute until fragrant.

Pour in white wine and scrape up any browned bits. Let it simmer for 2-3 minutes until mostly evaporated.

Add crushed tomatoes. Season with salt and pepper. Bring to a simmer.

Reduce heat to low, cover, and simmer for at least 25-30 minutes, stirring occasionally.

Meanwhile, cook spaghetti according to package directions until al dente. Drain.

Stir the cooked pancetta back into the sauce. Taste and adjust seasoning.

Serve the spicy pork ragu over the cooked spaghetti. Garnish with grated Pecorino Romano cheese and fresh parsley.
