- Fresh or dried lotus seeds150g
- Water1 liter
- Rock sugar150g
- Fresh or dried longans150g
- Pandan leaves (optional)1 stalk
- Salt1 pinch

Prepare lotus seeds: if using fresh, remove germ; if using dried, soak overnight. Boil until tender. Drain and set aside.

Prepare longans: if using fresh, peel and pit. If using dried, rinse them.

In a pot, combine 1 liter of water and rock sugar. Heat until sugar dissolves. Add a pinch of salt.

If using pandan leaves, tie into a knot and add to the syrup. Simmer for 10 minutes. Remove leaves.

Add the cooked lotus seeds and prepared longans to the sweet syrup. Simmer for 15-20 minutes, allowing flavors to meld.
