- Firm white fish fillets (e.g., catfish, snakehead)1.5 lbs
- Fish sauce4 tbsp
- Sugar1.5 tbsp
- Garlic, minced2 cloves
- Shallots, minced1 large
- Fresh green peppercorns, lightly crushed2 tbsp
- Black pepper1 tsp
- Water1/2 cup
- Chili, sliced1-2
- Scallions, chopped (for garnish)2 stalks
- Vegetable oil1 tbsp

Cut fish into 2-inch pieces. Season lightly with salt and pepper.

In a bowl, mix fish sauce, sugar, and 1/4 cup water.

Heat oil in a clay pot (tộ) or heavy-bottomed pot over medium heat. Sauté minced garlic and shallots until fragrant.

Add the green peppercorns and sauté for 1 minute until fragrant.

Pour in the fish sauce mixture and the remaining 1/4 cup water. Bring to a simmer.

Gently add the fish pieces into the simmering sauce. Add chili slices.

Cover the pot and simmer over low heat for 20-25 minutes, or until the fish is cooked through and the sauce has thickened. Stir occasionally.
