- Chicken thighs, boneless and skinless400g
- Tteokbokki (Korean rice cakes)300g
- Gochujang3 tbsp
- Gochugaru1 tbsp
- Soy sauce2 tbsp
- Mirin2 tbsp
- Garlic, minced1 tbsp
- Sugar1 tbsp
- Anchovy broth or water1.5 cups
- Fish cakes (eomuk), sliced (optional)100g
- Onion, sliced1/2 medium
- Mozzarella cheese, shredded150g
- Green onions, chopped (for garnish)2 tbsp
- Saltto taste
- Black pepperto taste

Cut chicken into bite-sized pieces. In a bowl, mix gochujang, gochugaru, soy sauce, mirin, minced garlic, sugar, salt, and pepper. Add chicken and toss to coat. Marinate for 15 minutes.

If using dried rice cakes, soak them in warm water for 10 minutes. Drain.

In a large pan or pot, combine the anchovy broth (or water), marinated chicken, rice cakes, sliced onion, and fish cakes (if using). Bring to a boil.

Reduce heat to medium-low, cover, and simmer for 10-15 minutes, stirring occasionally, until the rice cakes are soft and the sauce has thickened.

Stir in the shredded mozzarella cheese until melted and gooey. If the sauce becomes too thick, add a little more water or broth.

Garnish with chopped green onions and serve hot in a bowl.
