
Traditional Greek Gyros with Tzatziki

- Greek yogurt400 g
- Cucumber1 large
- Garlic3 cloves
- Fresh dill1/4 cup chopped

- Paprika1 tbsp
- Cumin1 tsp
- Tomatoes2 medium, sliced
- Red onion1/2 medium, thinly sliced

For the marinade: In a bowl, combine olive oil, lemon juice, oregano, paprika, cumin, salt, and pepper. Add the pork shoulder, cut into thin slices or chunks, and marinate for at least 2 hours, or preferably overnight in the refrigerator.

For the tzatziki: Grate the cucumber and squeeze out as much water as possible. Finely mince the garlic. In a bowl, combine Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, salt, and pepper. Mix well and refrigerate.

Cook the pork: Heat a grill pan or outdoor grill to medium-high heat. Grill the marinated pork slices until cooked through and slightly charred, about 5-7 minutes per side. Alternatively, roast in a preheated oven at 200°C (400°F) until cooked.

Warm the pita bread on the grill or in a dry pan until soft and pliable.

Assemble the gyros: Spread a layer of tzatziki sauce on each warm pita. Top with grilled pork, sliced tomatoes, and red onion. Fold or roll the pita to serve.
