- Dried mixed herbs (e.g., thyme, oregano)2 tbsp

Preheat oven to 180°C (350°F).

Score the skin of the pork knuckles.

In a small bowl, mix minced garlic, dried herbs, salt, and pepper.

Rub the pork knuckles with the herb and garlic mixture. Drizzle with vegetable oil.

Place the pork knuckles in a roasting pan with about 1 cm of water.

Cover with foil and roast for 2.5 hours.

Remove foil, increase heat to 200°C (400°F), and roast for another 30-40 minutes until skin is crisp.
