- Rabbit, cut into pieces1.5 kg
- Bacon, diced150g
- Mushrooms, sliced250g
- Onions, chopped2 medium
- Carrots, sliced2 medium
- Garlic, minced3 cloves
- All-purpose flour3 tbsp
- Dry white wine150 ml
- Chicken or rabbit broth700 ml
- Fresh thyme2 sprigs
- Fresh parsley, chopped (for garnish)2 tbsp
- Olive oil or butter2 tbsp
- Saltto taste
- Black pepperto taste

Season rabbit pieces with salt and pepper. Dredge lightly in flour.

In a large pot or Dutch oven, cook diced bacon until crisp. Remove bacon bits and set aside, leaving the rendered fat in the pot.

Add rabbit pieces to the pot and brown them in the bacon fat. Remove and set aside.

Add chopped onions and sliced carrots to the pot. Sauté until softened, about 7-8 minutes.

Add sliced mushrooms and cook until browned, about 5 minutes.

Add minced garlic and cook for 1 minute until fragrant.

Sprinkle the remaining flour over the vegetables and cook, stirring, for 1 minute.

Pour in the white wine, scraping the bottom of the pot. Let it reduce slightly.

Return the rabbit pieces to the pot. Add broth and thyme sprigs. Bring to a simmer.

Reduce heat to low, cover, and simmer for 1.5 hours, or until rabbit is tender.

Stir in the reserved crispy bacon bits. Season with salt and pepper to taste. Remove thyme sprigs.
