- Boneless lamb shoulder1.5 kg
- SaltTo taste
- Black pepperTo taste
- Rosemary2 sprigs, chopped
- Thyme1 sprig, chopped
- Garlic4 cloves, minced
- Olive oil50 ml
- Lemon juice2 tbsp

Cut the lamb shoulder into large chunks.

In a bowl, combine olive oil, lemon juice, minced garlic, chopped rosemary, and thyme. Season with salt and pepper.

Add the lamb chunks to the marinade and toss to coat evenly. Let marinate for at least 1 hour (or up to 4 hours in the refrigerator).

Preheat oven to 180°C (350°F).

Arrange the marinated lamb chunks in a single layer in a roasting pan.

Roast for 1.5 to 2 hours, or until the lamb is tender and browned. Turn the pieces halfway through cooking.
