- Smoked Pork Shoulder500 g
- Onion2 medium
- Carrot2 medium
- Potatoes3 medium
- Garlic3 cloves
- Bay Leaf2
- Smoked Paprika1 tsp
- Vegetable Broth or Water1.5 liters
- Sunflower Oil2 tbsp
- Saltto taste
- Black Pepperto taste
- Fresh Parsley or Dill for garnishoptional

Rinse the sauerkraut under cold water and squeeze out excess liquid. Chop if pieces are too large.

Cut the smoked pork into bite-sized cubes.

Peel and dice the onions and carrots. Peel and cube the potatoes. Mince the garlic.

Heat sunflower oil in a large pot or Dutch oven over medium-high heat. Brown the smoked pork cubes.

Add the diced onions and carrots to the pot and sauté until softened, about 5-7 minutes.

Stir in the minced garlic and smoked paprika, cook for 1 minute until fragrant.

Add the rinsed sauerkraut, cubed potatoes, bay leaves, vegetable broth (or water), salt, and pepper. Bring to a boil.

Reduce heat to low, cover, and simmer for at least 1.5 to 2 hours, or until the pork is tender and the flavors have melded. Stir occasionally.

Remove bay leaves before serving. Adjust seasoning if needed.

Serve hot, garnished with fresh parsley or dill. Sour cream is a common accompaniment.
