A classic Bulgarian banitsa-like pastry, Mesechnitsa is made with layers of thin phyllo dough filled with a mixture of sirene cheese, eggs, and yogurt, then baked until golden and flaky. It's a staple for breakfast or any time of day.

- phyllo dough sheets1 package (about 1 lb)
- sirene cheese (Bulgarian white brine cheese)1 lb
- eggs4 large
- plain yogurt1 cup
- butter, melted1/2 cup
- vegetable oil1/4 cup
- salt1/2 teaspoon
- black pepper1/4 teaspoon

Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.

Crumble the sirene cheese into a large bowl. Add eggs, yogurt, salt, and pepper. Mix well until combined.

Lay one sheet of phyllo dough in the prepared baking dish, brushing it lightly with melted butter and oil mixture. Repeat with 4-5 more sheets, layering and brushing each one.

Spread the cheese and egg mixture evenly over the layered phyllo sheets.

Layer the remaining phyllo sheets on top of the filling, brushing each sheet with the butter and oil mixture. Tuck the edges in.

Brush the top layer generously with the butter and oil mixture.

Score the top of the pastry into serving portions before baking.

Bake for 30-40 minutes, or until the top is golden brown and crispy.
