- Butter, cold and cubed250g
- Bulgarian Sirene cheese300g
- Eggs2
- Yogurt150ml
- Baking powder1 tsp
- Salt1 tsp
- Black pepper1/2 tsp
- Egg yolk for brushing1

For the dough: Combine flour and salt. Cut in cold butter until mixture resembles coarse crumbs. In a separate bowl, whisk eggs and yogurt. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms. Do not overmix. Wrap in plastic and chill for 30 minutes.

For the filling: Crumble the sirene cheese. Mix with black pepper. If the cheese is very salty, you can add a tablespoon of water or yogurt.

Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.

Roll out the dough to about 0.5 cm thickness. Cut into squares or rectangles.

Place a spoonful of cheese filling onto one half of each dough piece. Fold the other half over to create a pocket or pastry. Crimp the edges to seal.

Place pastries on the prepared baking sheets. Brush the tops with egg yolk.

Bake for 20-25 minutes, or until golden brown and puffed.
