Wash the zucchini and trim the ends. Slice them thinly, about 3-5 mm thick.

Lightly salt the zucchini slices and let them sit for about 15-20 minutes to release some moisture. Pat them dry with paper towels.

Place the flour in a shallow dish. Dredge each zucchini slice in the flour, coating both sides lightly. Shake off any excess.

Heat a generous amount of olive oil in a large skillet over medium-high heat. The oil should be hot but not smoking.

Fry the floured zucchini slices in batches, without overcrowding the pan, until golden brown and tender on both sides. This will take about 2-3 minutes per side.

Remove the fried zucchini slices with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.

Season with salt and black pepper to taste. Garnish with fresh dill and serve immediately with lemon wedges.
