Prepare the ragù: Finely chop pancetta, onion, carrots, celery, and garlic. Sauté pancetta in olive oil until crisp. Add vegetables and cook until softened. Add ground beef and pork, brown well. Deglaze with red wine and cook until evaporated. Stir in tomato passata, milk, salt, and pepper. Simmer for at least 1.5-2 hours.

Prepare the béchamel sauce: Melt butter in a saucepan, whisk in flour to form a roux. Gradually whisk in milk until smooth. Cook, stirring, until thickened. Season with salt and pepper.

Cook lasagna sheets if using dried, according to package directions. If using fresh, they can often be used directly.

Assemble the lasagna: Spread a thin layer of ragù on the bottom of a baking dish. Layer with pasta sheets, béchamel sauce, ragù, and grated Parmesan cheese. Repeat layers, finishing with béchamel and a generous topping of mozzarella and Parmesan.

Bake in a preheated oven at 180°C (350°F) for 30-40 minutes, or until golden brown and bubbling.

Let the lasagna rest for 10-15 minutes before slicing and serving.
