Prepare the dough as per the traditional Dobrudzhanki recipe (steps 1-4).

In a bowl, combine crumbled sirene cheese, crumbled feta cheese, eggs, chopped spinach, and black pepper. Mix thoroughly.

Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.

Divide the rested dough into equal portions. Roll each into a circle or oval.

Place a generous spoonful of the spinach and cheese filling onto one half of each dough circle. Fold the other half over to create a half-moon shape, sealing the edges.

Place the pastries on the prepared baking sheet. Brush the tops with the egg yolk.
