
Traditional Ukrainian Lentil Soup (Leshchyna Chorna)

Съставки
- Brown lentils2 cups
- Smoked pork ribs or bacon1 lb
- Onion1 large
- Carrots2 medium
- Potatoes2 medium
- Garlic3 cloves
- Bay leaf1
- Vegetable oil or lard2 tbsp
- Water or broth8 cups
- Saltto taste
- Black pepperto taste
- Fresh dill for garnisha handful

Rinse lentils thoroughly and soak if recommended by package instructions.

If using smoked ribs, cut them into serving pieces. If using bacon, dice it.

Finely chop the onion, grate or dice the carrots, and dice the potatoes. Mince the garlic.

In a large pot or Dutch oven, heat oil or lard over medium heat. If using bacon, render it first, then add onion and sauté until softened.

Add carrots and cook for another 5 minutes until slightly tender.

Add the smoked pork ribs (if using) to the pot. If using bacon, add the minced garlic and cook for 1 minute until fragrant.

Add the rinsed lentils, diced potatoes, bay leaf, water or broth, salt, and pepper.

Bring the soup to a boil, then reduce heat, cover, and simmer for 60-75 minutes, or until lentils and potatoes are tender and the soup has thickened.

Remove the bay leaf and smoked ribs (if desired, meat can be removed from bones and added back). Adjust seasoning with salt and pepper.

Ladle the soup into bowls and garnish with fresh dill before serving.
