Prepare the chicken broth: Place the whole chicken in a large pot, cover with cold water, add half an onion, a bay leaf, and a few peppercorns. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until chicken is cooked through. Skim off any foam.

Strain the broth. Discard the boiled onion and bay leaf. Remove chicken from the pot, let it cool slightly, then shred or dice the meat. Strain the broth through a fine-mesh sieve.

Prepare the soup base: Peel and dice the carrots and the remaining half onion. Add the diced carrots and onion to the strained broth. Bring to a simmer and cook for about 10-15 minutes until vegetables are tender.

Add noodles and chicken: Bring the broth back to a gentle boil. Add the egg noodles and cook according to package directions (or until al dente if homemade). Add the shredded chicken back into the soup.

Season and serve: Season the soup with salt and black pepper to taste. Stir in freshly chopped dill just before serving. Ladle into bowls.
