- Pork tenderloin600g
- Onions2 medium
- Bell peppers (mixed colors)2
- Cherry tomatoes200g
- Garlic3 cloves
- White wine or chicken broth100 ml
- Tomato paste1 tbsp
- Paprika (sweet)1 tsp
- Black pepper1/2 tsp
- Saltto taste
- Vegetable oil2 tbsp
- Fresh parsleyfor garnish

Cut pork tenderloin into thin strips or small cubes. Season with salt and pepper.

Slice onions and bell peppers. Mince garlic. Halve cherry tomatoes.

Heat oil in a large skillet over medium-high heat. Sear pork strips until browned. Remove pork and set aside.

Add onions and peppers to the skillet. Sauté until tender-crisp, about 5 minutes.

Stir in minced garlic, tomato paste, and paprika. Cook for 30 seconds.

Return pork to the skillet. Add cherry tomatoes and white wine (or broth). Cook until tomatoes soften and sauce slightly thickens, about 5-7 minutes.

Adjust seasoning. Garnish with fresh parsley before serving.
