
Quick Duck Breast with Pan-Fried Sauerkraut

- Sauerkraut500g
- Onion1 small
- Garlic2 cloves
- Caraway seeds1/2 tsp
- Vegetable oil1 tbsp
- Saltto taste
- Black pepperto taste

Score the skin of the duck breasts in a crosshatch pattern. Season both sides with salt and pepper.

Place duck breasts skin-side down in a cold, dry skillet. Turn heat to medium-low. Cook for 8-10 minutes, rendering the fat until the skin is golden brown and crispy. Flip and cook for another 3-5 minutes for medium-rare, or to your desired doneness. Remove duck from skillet and let rest.

While duck rests, drain the sauerkraut well. Finely chop onion and garlic. Add vegetable oil to the same skillet (pour off excess fat if needed). Sauté onion until softened, about 3 minutes. Add garlic and caraway seeds, cook for 1 minute more.

Add the drained sauerkraut and 2 tbsp of water to the skillet. Stir and cook over medium-high heat for 5-7 minutes, until heated through and slightly crisped.

Slice the rested duck breasts. Serve the sliced duck over the pan-fried sauerkraut.
