- Salmon fillets4 (6 oz each)
- White miso paste3 tablespoons
- Soy sauce3 tablespoons
- Mirin2 tablespoons
- Sake1 tablespoon
- Honey or maple syrup1 tablespoon
- Ginger, grated1 teaspoon
- Sesame oil1 teaspoon
- Asparagus, trimmed1 bunch
- Sushi rice, cooked2 cups
- Cilantro, freshfor garnish

Preheat oven to 400°F (200°C).

In a bowl, whisk together miso paste, soy sauce, mirin, sake, honey (or maple syrup), grated ginger, and sesame oil until smooth. This is your miso-teriyaki glaze.

Pat salmon fillets dry and season with salt and pepper.

Place salmon fillets on a baking sheet lined with parchment paper. Brush generously with the miso-teriyaki glaze.

Roast for 12-15 minutes, or until salmon is cooked through and the glaze is caramelized. Baste with more glaze halfway through cooking if desired.

While salmon is roasting, lightly sauté or steam the asparagus until tender-crisp.
