Ingredients
- All-purpose flour450g
- Instant yeast1.5 tsp
- Sugar60g
- Warm milk200ml
- Melted unsalted butter50g
- Egg1 large
- Mixed dried fruit120g
- Ground cinnamon1 tsp
- Ground mixed spice1/2 tsp
- Salt1/2 tsp
- For the cross: All-purpose flour80g
- For the cross: Waterapprox. 40-50ml
- For the glaze: Honey or sugar syrup2 tbsp
Steps

In a large bowl, whisk together flour, instant yeast, sugar, spices, and salt.

In a separate bowl, whisk together warm milk, melted butter, and egg.

Pour the wet ingredients into the dry ingredients and mix with a spoon or spatula until just combined into a shaggy dough. Do not overmix.

Gently fold in the dried fruit.

Cover the bowl and let the dough rise in a warm place for about 1 hour, or until noticeably puffed up.

Turn the dough out onto a lightly floured surface. Divide into 10 portions and shape into rough balls. The dough will be sticky.

Place buns on a baking sheet lined with parchment paper. Cover and let rise for another 20-30 minutes.

Preheat oven to 190°C (375°F).

Prepare the cross paste by mixing flour and water to a smooth, thick consistency. Put into a piping bag.

Pipe crosses onto the buns.
