Ingredients
- Pork tenderloin1 lb
- Cornstarch3 tbsp
- Vegetable oil2 tbsp
- Ketchup1/3 cup
- Pineapple juice1/4 cup
- Brown sugar2 tbsp
- Rice vinegar2 tbsp
- Soy sauce1 tbsp
- Mixed bell peppers2 cups
- Onion1/2
- Garlic1 clove
- Saltto taste
- Black pepperto taste
- Water1 tbsp

Cut pork tenderloin into bite-sized pieces. Toss with cornstarch, salt, and pepper.

Heat 1 tbsp vegetable oil in a wok or large skillet over medium-high heat. Stir-fry pork until browned and cooked through. Remove pork from skillet.

Add remaining 1 tbsp oil to the skillet. Add chopped bell peppers and onion, stir-fry for 3-4 minutes until tender-crisp. Mince garlic and add, stir-fry for 30 seconds.

In a small bowl, whisk together ketchup, pineapple juice, brown sugar, rice vinegar, soy sauce, and water.

Pour the sauce into the skillet with the vegetables. Bring to a simmer and cook for 1-2 minutes until slightly thickened.

Return the cooked pork to the skillet. Toss everything to coat evenly in the sauce. Serve hot.
