Ingredients
- Pre-pressed firm tofu14 oz
- Mixed stir-fry vegetables (e.g., broccoli, carrots, bell peppers, onions)4 cups
- Garlic, minced2 cloves
- Ginger, grated1 tsp
- Soy sauce3 tbsp
- Rice vinegar1 tbsp
- Honey or maple syrup1 tsp
- Cornstarch1 tsp
- Vegetable oil1 tbsp
- Water2 tbsp
- Saltto taste
- Black pepperto taste

Cut tofu into bite-sized pieces. Heat 1/2 tbsp vegetable oil in a wok or skillet over medium-high heat. Add tofu and cook until lightly browned. Remove and set aside.

In a small bowl, whisk together soy sauce, rice vinegar, honey, cornstarch, and 2 tbsp water.

Add remaining 1/2 tbsp vegetable oil to the wok. Add garlic and ginger, stir-fry for 15 seconds.

Add mixed vegetables and stir-fry for 3-5 minutes until tender-crisp.

Return tofu to the wok. Pour the sauce over and stir until thickened.
