In a large bowl, mix active sourdough starter, water, and flour until just combined. Cover and let rest for 30 minutes.

Add salt and mix until fully incorporated. Cover and let ferment at room temperature for 8-12 hours, or until bubbly and increased in volume.

Gently turn the dough out onto a lightly floured surface. Shape into a round or oval loaf. Place seam-side up in a floured proofing basket or bowl lined with a floured towel.

Cover and let proof at room temperature for 1-2 hours, or until puffy.

Preheat oven to 450°F (230°C) with a Dutch oven inside for at least 30 minutes.

Carefully turn the dough out of the proofing basket into the hot Dutch oven. Score the top if desired.

Bake covered for 30 minutes. Remove the lid and bake for another 15-20 minutes until golden brown and sounds hollow when tapped.

Cool completely on a wire rack before slicing.
